Pineapple Jalapeño Smash
When my home-state magazine, At Home in Arkansas reached out and asked if I’d recommend a cocktail with some heat, this pineapple-jalapeño concoction immediately popped into my head. What says summer more than a vodka pineapple? And with Cinco de Mayo right around the corner, it felt only right to add a little spice!
Pineapple Jalapeño Smash
INGREDIENTS (Makes 1 Cocktail):
5-6, 1-inch fresh pineapple chunks
2 slices jalapeños
1/2 lime, juiced
2 ounces vodka
3oz. pineapple juice
DIRECTIONS:
1. In a cocktail shaker, combine pineapple, jalapeños, and lime juice. Muddle together until completely smashed.
2. Add vodka, pineapple juice, and a few ice cubes. Cover and shake.
3. In an old-fashioned glass, add ice, and pour cocktail in glass and garnish with pineapple or jalapeño slices as desired. If preferred, you may strain strain to remove pieces of fruit.
