Peppermint Bark Chocolate Donuts
I love Christmas and I love donuts, so when I was given some peppermint bark as a gift, I immediately knew I wanted to make a Christmas donut! This is a perfect (and easy) baked, donut recipe, using cocoa and semi-sweet chocolate chips, dipped in a dark chocolate glaze and topped with festive, peppermint bark sprinkles. You can always leave the peppermint bark off, but we're making a Christmas donut here! I had these with a glass of milk and with coffee the next morning. Sorry, Santa - you won't be getting milk and cookies this Christmas, you're getting upgraded to Peppermint-Bark Chocolate Donuts!
Peppermint Bark Chocolate Donuts
Makes approximately 10 donuts (Wilton 6-cavity donut pan from Bed Bath & Beyond)
Ingredients
Donuts
Dry Ingredients
- 1 cup flour
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1/4 cup mini chocolate, semi-sweet chocolate chips
- 1/2 teaspoon baking soda
Wet Ingredients
- 1/2 teaspoon vanilla extract
- 1 large egg
- 6 tablespoons sour cream
- 1/4 cup whole milk
- 1/4 cup vegetable oil
Glaze
- 1 cup dark chocolate chips
- 1/3 cup heavy whipping cream
- 1/2 teaspoon vanilla exctract
- 1 cup, chopped peppermint bark (Williams-Sonoma)
Instructions
- Preheat oven to 375 degrees F.
- Combine the dry ingredients in a large mixing bowl.
- Combine the wet ingredients in a medium mixing bowl and whisk.
- Add the wet ingredients to the dry, stirring until just combined.
- Spray your donut pan with cooking spray
- Using a spoon or piping bag, fill each cavity 3/4 of the way full.
- Bake for approxiamtely 8 minutes.
- Let donuts cool in the pan. THIS IS IMPORTANT. If they're too warm they'll break in half when dipping in the glaze. Hmm, how do I know this?
Glaze
- In a medium sauce pan over med-low heat, bring cream to a low simmer.
- Remove from heat and pour over chocolate, letting rest for 4-5 minutes.
- Add vanilla, then whisk together until you have a shiny smooth glaze.
- Dunk tops of donuts allowing excess to drip back into bowl.
- Place donuts on rack and sprinkle with peppermint bark. Let set for 10-15 minutes.
