Angel Hair Pasta with Artichokes

This is one of my favorite LIGHT pasta dishes. Since it's made with olive oil and some simple, tasty ingredients, it doesn't come with the guilt that a lot of other pasta dishes do. The best part, you can make it in the matter of minutes!

Ingredients:

  • 4 tablespoons olive oil

  • 2 cloves fresh garlic finely diced

  • 1 cup sun-dried tomatoes, drained

  • 1/2 cup finely sliced, black olives

  • 1/4 cup capers
  • 
1 small jar of artichoke hearts, halved

  • 1 package of angel hair pasta

Instructions:

To flavor the oil with garlic, but not burn it, warm the oil over medium-low heat, stirring in the garlic. Sauté a few moments, pressing it with a wood spatula to release its flavors. Let it turn the palest blond and use a slotted spoon to remove it from the pan. Sauté tomatoes, olives, capers, and artichoke hearts and sauté. Add the garlic back in just before serving. Cook pasta per the instructions and drain. Drizzle olive oil over pasta and toss with the tomatoes, olives, capers and artichokes. Add sliced, grilled chicken breast as a tasty variation and enjoy!
