Sun-Dried Tomato & Spinach Salad with Feta

This is easily one my favorite salads. I first had it (I think), about 10 years ago when a friend of mine came over for dinner. She easily threw this salad together and it did NOT disappoint. It's evolved ever-so-slightly with the addition of slice almonds. Mediterranean-inspired, it combines sun-dried tomatoes, with baby spinach, feta, Kalamata olives, all tossed in a balsamic vinaigrette. SO good and SO easy. I always toss this salad together without measuring based on my own personal tastes. You can make adjustments as the directions listed below are a simply a go-by. Enjoy!

Ingredients:

(4 Servings)
10 oz. baby spinach
1  to 1 & 1/2 cups sun-dried tomatoes (drained)
1 cup, sliced kalamata olives
4 oz. feta cheese
1 cup slivered almonds
1-2 tablespoons dried minced garlic
1 to 1 & 1/2 cup of Balsamic vinaigrette dressing

Directions:

1. Toss all ingredients together to combine. Again this can all be changed based on your own taste. I sometimes add more feta and garlic OR sun-dried tomatoes. All ingredients above are an estimate, so feel free to play around with it. You won't be disappointed! 

NOTE - I like to go easy on the dressing at first, since the sun-dried tomatoes and olives add a nice level of moisture to the spinach. Add as much or as little as you like.
