If you're like me, you've probably seen a lot of food blogs and sites talk about national food days. Peanut butter and Jelly day, ice cream day, grilled cheese day...the list goes on. I decided to do a little research and found one of these food calendars. It wasn't too difficult and after reviewing all of these food days, (there's literally something every day), I found that some are a little silly however, there are many that served as a reminder of how many ingredients (like spinach), are sometimes forgotten and how many can be used in a variety of different dishes.
That brings us to March 26th, National Spinach Day! I love spinach and the versatility of this fine vegetable. Whether it's spinach pasta, spinach artichoke dip or a tasty spinach salad, the possibilities are truly endless. Don't believe me, just try going to Pinterest and typing Spinach Recipe in to the search field and you'll find page after page after page...you get the idea.
I've pulled together some spinach receipts that I think sound pretty tasty on my board, National Spinach Day.
I also wanted to make something spinach-inspired, so I decided on this spinach carbonara. Spinach Fettuccine with chopped pancetta, fresh spinach and a carbonara sauce. RECIPE COMING THIS WEEKEND (March 30th) - SO CHECK BACK!
